Lobia (One Eyed Pea) Peanut Butter Curry



For Curry

2 tbsp cooking oil

2 cups lobia beans (soaked overnight & boiled)

1 onion, diced

4 garlic cloves, minced

1 tbsp minced ginger

2 tbsp tomato puree

2 large tomatoes, peeled, chopped

1 potatoes, 2 cm cubes

2 cup water

1 cup peanut butter

Salt & Pepper to taste


– Heat the oil in a large pot over medium heat, add the onions to the oil in the pot and saute until translucent, 5 + minutes

– Add a splash of water to lift the caramelized fond, stir in the garlic and ginger. Saute another 1-2 minutes.

– Add the lobias to the pot, add tomato puree, then stir in the chopped tomatoes and bring to a simmer. Reduce heat to low heat and allow to cook for 8-10 minutes.

– Stir in the peanut butter and water, stir it and let it simmer for 25 minutes (or longer to reduce and concentrate the flavours)

– Add salt and pepper to taste

  • Serve with steamed rice or roti
