Lobia (One Eyed Pea) Peanut Butter Curry
Ingredients (For Curry)
- 2 tbsp cooking oil
- 2 cups lobia beans (soaked overnight & boiled)
- 1 onion, diced
- 1 tbsp minced ginger
- 2 tbsp tomato puree
- 2 large tomatoes, peeled, chopped
- 1 potatoes, 2 cm cubes
- 2 cup water
- 1 cup peanut butter
- Salt & Pepper to taste
Instructions
- Heat the oil in a large pot over medium heat, add the onions to the oil in the pot and saute until translucent, 5 + minutes
- Add a splash of water to lift the caramelized fond, stir in the garlic and ginger. Saute another 1-2 minutes.
- Add the lobias to the pot, add tomato puree, then stir in the chopped tomatoes and bring to a simmer. Reduce heat to low heat and allow to cook for 8-10 minutes.
- Stir in the peanut butter and water, stir it and let it simmer for 25 minutes (or longer to reduce and concentrate the flavours)
- Add salt and pepper to taste
- Serve with steamed rice or roti
